Sweet Potato Fries

Sweet potato and yam fries are a colorful and tasty alternative to french fries.
Ingredients
  • 2 sweet potatoes and/or yams
  • 1-2 Tbsp canola oil
  • Salt, to taste
  • A sprinkle of cinnamon, to taste, optional
  • A sprinkle of brown sugar, to taste, optional
  • A sprinkle of paprika, to taste, optional
Instructions
  1. Rinse and peel the sweet potatoes and yams.
  2. Slice them into thin strips. {You can also cut them into wedges or medallions, just make sure that all of them are roughly the same size and shape to ensure even cooking.}
  3. Place the strips in a bowl of ice water and let them soak for at least 30 minutes to remove the starch.
  4. Rinse the soaked strips and then dry them completely with paper towels or dish towels to remove all excess liquid.
Oven-Baked Sweet Potato Fries
  1. Pour the oil on a baking sheet.
  2. Place the sweet potato/yam strips on the greased baking sheet, arranged so that they do not touch each other on the pan.
  3. Brush oil on each individual strip.
  4. Salt and season the strips lightly, tossing them on the pan to ensure that all sides are evenly coated with the oil and seasonings.
  5. Bake them at 450-500 degrees for about 7-10 minutes on each side, until the strips are a dark golden brown (it may take longer), watching them closely so that they don't burn.
For Pan-Fried Sweet Potato Fries
  1. Generously layer the bottom of a pan with canola oil so that the entire bottom of the pan is covered.
  2. Heat the oil at medium heat for several minutes.
  3. Lightly season the raw sweet potato/yam strips with salt and the other seasonings of your choice.
  4. Add the strips to the pan and cook them until they turn golden brown, checking frequently to make sure that they don't burn.
  5. Reduce the heat if they are cooking too quickly.
  6. When done, place the fries on a paper towel to dab the grease.
  7. Add salt and other seasonings to taste.
