Mickey Mouse Pancakes {Chocolate Chip-Banana-Oatmeal Pancakes}

- 1 cup flour
- 1 cup oatmeal
- 1 Tbsp brown sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 egg
- 1 cup buttermilk
- 2 Tbsp oil
- ¼ -1/2 cup chocolate chips
- 2 bananas, mashed
- Mix the dry ingredients together in a bowl.
- Stir in the wet ingredients just until everything comes together. The batter should still be lumpy.
- Heat a pancake griddle over medium heat and lightly grease it by rubbing a stick of butter across the service.
- Pour just under ⅓ cup of batter onto the griddle and quickly and gently spread it into a circle using the back of the spoon.
- Pour just under 1 Tablespoon of batter onto the griddle for each ear.
- When bubbles start to appear on the surface, flip the pancake and continue letting it cook until both sides are golden brown.
- Serve the pancakes with maple syrup and the toppings of your choice.
