Tzatziki Sauce

Tzatziki sauce {also known as cucumber salad} can technically be served as a dip or a salad but for me, I have always known it as the sauce that makes gyros.
Ingredients
  • 2 cups low-fat Greek yogurt
  • 1 cucumber, peeled and thinly sliced
  • 1 tsp + 2-3 pinches salt
  • 2 garlic cloves
  • 2-3 tsp white wine vinegar
  • 2 tsp chopped fresh mint
  • Salt and pepper, to taste
  • 1 Tbsp olive oil
Instructions
  1. Line a fine mesh colander with a cheese cloth or a coffee filter. {A paper napkin worked for me.}
  2. Let the yogurt drain for a couple of hours.
  3. Toss the cucumber and 1 tsp salt in a colander.
  4. Let the cucumber mixture rest for 30 minutes and then press out the excess water, rinsing them quickly and blotting them dry with paper towels.
  5. In a separate bowl, mash the garlic cloves and a few pinches of salt.
  6. Combine the drained yogurt, cucumbers, garlic paste and the remaining ingredients.
  7. Finish by seasoning the sauce to taste.
  8. Place the sauce in a sealed container and chill it until you are ready to use.
