Peanut Butter Banana Muffins

I simply substituted peanut butter for the shortening in these muffins so I got the PB-banana flavor while adding protein and other nutrients from the nut butter.
Ingredients
  • ½ cup peanut butter
  • 1 cup brown sugar
  • 2 eggs (OR ⅔ cup applesauce OR 1 additional banana)
  • 1 cup mashed banana (2+ ripe bananas)
  • 2 cups flour
  • 1 tsp baking soda
  • ⅓ cup milk + 1 tsp vinegar or lemon juice (or ⅓ cup + 1 tsp buttermilk)
Instructions
  1. Cream the peanut butter and the sugar.
  2. Add the eggs and the mashed bananas.
  3. Alternate between adding the remaining dry and wet ingredients.
  4. Spoon the batter into lined muffin tins (or pour the batter into a greased loaf pan).
  5. Bake the muffins at 350 degrees for 15+ minutes or until a toothpick comes out clean. A loaf of banana bread will cook for 50-60 minutes.
  6. Let the muffins cool completely on a wire rack.
