My boys devour these nutrient-loaded banana-oatmeal-chia hotcakes, typically with peanut butter and a splash of syrup, while I like to top mine with almond butter and berries.
Ingredients
½ cup whole wheat flour
½ cup flour
1 cup whole oats
1 Tbsp chia seeds
1 tsp baking powder
½ tsp baking soda
Dash of salt
1 cup buttermilk
½ tsp vanilla
1-2 bananas, mashed
1 egg
Instructions
Mix the dry ingredients.
Stir in the wet ingredients until just mixed.
Cook the pancakes on a griddle at medium-high heat.
Once bubbles start to form on top, flip the pancake and cook until both sides are golden.
Serve with berries, jam, almond {or peanut} butter and maple syrup.
