One-Ingredient Eggnog Ice Cream

This one-ingredient eggnog ice cream is much quicker and healthier than a custard-based eggnog ice cream. In under 30 minutes (or the time it takes to churn the ice cream), you can have a creamy, not-too-sweet frozen treat made with low-fat eggnog.
Ingredients
  • Low-fat eggnog
  • Nutmeg, optional
Instructions
  1. Churn the chilled eggnog in your ice cream maker.
  2. Or, pour in a chilled 9x13 cake pan and place in the freezer for 30 minutes to an hour.
  3. Then whisk it vigorously in the pan to break up the frozen chunks.
  4. Return to the freezer and continue the process, whisking every 30 minutes (or when it begins to freeze) until it reaches the texture of soft-serve ice cream.
  5. Freeze to harden completely like ice cream.
  6. Sprinkle your scoops of eggnog ice cream with nutmeg if desired.
