Mix and match optional ingredients such as banana, oatmeal, chia seeds and chocolate chips to make nutrient-packed waffles that will keep you energized for a long day of fun in the snow.
Ingredients
1¾ cups flour
½ tsp salt
2 tsp baking soda
3 tsp sugar (optional)
1 cup oatmeal
2 eggs
1¼ cup buttermilk
⅓ cup oil
1 banana, mashed
1 Tbsp chia seeds
¼ - ½ cup chocolate chips
1 tsp vanilla
Instructions
Mix the dry ingredients.
Beat in the buttermilk milk, oil, vanilla, mashed banana and eggs.
Stir in the chocolate chips.
Cook the waffles on a lightly greased waffle iron, according to the directions of your waffle maker. (I use ¾ - 1 cup batter.)
Serve the waffles with maple syrup.
