Chocolate Chip Banana Oat Waffles

Mix and match optional ingredients such as banana, oatmeal, chia seeds and chocolate chips to make nutrient-packed waffles that will keep you energized for a long day of fun in the snow.
Ingredients
  • 1¾ cups flour
  • ½ tsp salt
  • 2 tsp baking soda
  • 3 tsp sugar (optional)
  • 1 cup oatmeal
  • 2 eggs
  • 1¼ cup buttermilk
  • ⅓ cup oil
  • 1 banana, mashed
  • 1 Tbsp chia seeds
  • ¼ - ½ cup chocolate chips
  • 1 tsp vanilla
Instructions
  1. Mix the dry ingredients.
  2. Beat in the buttermilk milk, oil, vanilla, mashed banana and eggs.
  3. Stir in the chocolate chips.
  4. Cook the waffles on a lightly greased waffle iron, according to the directions of your waffle maker. (I use ¾ - 1 cup batter.)
  5. Serve the waffles with maple syrup.
