Chicken Potsticker Soup

- 2 chicken thighs or 1 chicken breast (or leftover pieces of roasted chicken), cut into bite-sized pieces
- 4 cups chicken broth
- 20+ potstickers, depending on their size
- 2-3 cups spinach leaves
- Salt and pepper, to taste
- ¼ cup feta cheese, optional
- Bring the broth to a boil in a large pot.
- Add the chicken thighs, cover the pot and let simmer for 10-15 minutes until the chicken is cooked.
- Season the soup to taste and add the potstickers.
- Cover the pot and cook for 5-10 minutes until the potstickers are fully cooked.
- Serve hot.
