St. Patrick's Day Sandwich

Green egg shamrock toast or grilled cheese sandwiches is a simple {festive} breakfast, snack or lunch for St. Paddy's day.
  • 2-4+ slices of Dave's Killer Bread or other multi-grain bread
  • 4+ egg whites
  • 1-2 tsp spinach juice, to color
  • Grated cheese
  • Small heart or shamrock cookie cutter
  1. Cut a shamrock out of all slices of bread. If making a sandwich, be sure to align the shamrock for the bottom and top slices.
  2. Lightly butter a pan and heat over medium heat on the stove top.
  3. In a small bowl, whisk the egg whites with the spinach juice.
  4. Place one slice of bread on the greased and heated griddle.
  5. Spoon green egg whites into the shamrock up to the bread level.
  6. If making toast, continue to cook until the egg has fully cooked, covering the pan with a lid if necessary to ensure even cooking without burning the toast.
  7. If making a sandwich, top the bread with grated cheese (and even small slices of ham if desired) and top with the second slice of bread.
  8. Spoon additional green egg white into the shamrock until it reaches the level of the top slice of bread.
  9. Continue cooking until the egg has fully cooked.
  10. Once the egg has set, you can flip the sandwich to lightly brown the top side of the sandwich.
