Chocolate Banana Cookies

 

If you like chocolate and you like bananas, then you will love these cookies.  The recipe came from my Grandma and has been passed down through our family.  Just as my Grandma and mom made them for my sister and me, I now make them for my family.  My sixteen-month old son loves them.  They are so soft and moist that they practically melt in your mouth.

These moist chocolate banana cookies have the texture of a cake in cookie form, and are so soft they almost melt in your mouth.
Ingredients
  • 2¼ cups flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ⅔ cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 6 ounces of chocolate chips, melted
  • 1 cup mashed banana (roughly 2 ripe bananas)
Instructions
  1. Melt the chocolate chips in the microwave, stirring every 30 seconds.
  2. Cream the sugar and the shortening.
  3. Mix in the rest of the ingredients, including the melted chocolate.
  4. Drop the cookie dough by tablespoonful on a greased baking sheet.
  5. Bake for 10-12 minutes at 325 degrees.
  6. Let the cookies cool on the baking sheet for 5-10 minutes.
  7. Transfer them to a cookie rack and let them cool completely.
  8. As they cool, they will deflate but will remain very soft and moist.
