Chocolate Chip Banana Bread

 

My family loves banana bread and the recipe that I grew up with is a classic that we never get tired of.  Sometimes I stir in some chocolate chips to make it extra special.  I’ve found that it also works to make a loaf that is half regular and half chocolate.  Once you have poured the batter into the pan, simply stir some chocolate chips into half of the loaf.

My family loves banana bread and this is a classic recipe that we never get tired of. Stir in chocolate chips to make a special treat.
Ingredients
  • ½ cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed banana (approximately 2 ripe bananas)
  • 2 cups flour
  • 1 tsp baking soda
  • ⅓ cup milk + 1 tsp vinegar (or ⅓ cup + 1 tsp buttermilk)
  • ½ - ¾ cup chocolate chips
Instructions
  1. Cream the shortening and the sugar.
  2. Mix in the eggs and then the mashed bananas.
  3. Alternately add the remaining dry and wet ingredients.
  4. Stir in the chocolate chips at the end.
  5. Pour the batter into a greased loaf pan.
  6. Bake the bread at 350 degrees for 50-60 minutes until a toothpick comes out clean.
  7. Let the loaf cool in the pan for ten minutes.
  8. Gently slide a knife around the edges of the loaf to loosen it from the pan.
  9. Then invert the pan onto a plate and gently shake and tap it until the bread falls out.
  10. Let the banana bread cool completely on a wire rack.

 

{TIP: Mashed bananas freeze well.  If I have bananas that are getting too ripe but I don’t have time to make bread, I mash the bananas and freeze them in 1 cup portions so that it’s all measured and ready to go for when I do have time to bake.}
