Chocolate-Covered Strawberries

 

Chocolate-covered strawberries have always been one of my favorite desserts.  They are sweet, light and refreshing.  This is the perfect time of year to make them because strawberries are in season. 

Take your kids to a local U-pick strawberry field and pick your own berries.  Then, let everyone in your family decorate some strawberries.  I have given some decorating suggestions below but let your kids come up with creative ideas of their own.

Ingredients

Strawberries

Coconut flakes

Chocolate sauce:

2 cups semi-sweet chocolate chips

1/4 tsp vanilla

2 Tbsp sugar

2 Tbsp milk

2 Tbsp water

Mix the ingredients in a sauce pan and stir them over low heat until the chocolate melts and a smooth chocolate sauce forms. 

White chocolate sauce:

1 cup white chocolate chips

Dash of vanilla

1 Tbsp sugar

1 Tbsp milk

1 Tbsp water

Mix the ingredients in a sauce pan and stir them over low heat until the white chocolate melts and a smooth sauce forms.

Rinse and pat dry the strawberries with a paper towel.  Decorate them as desired.

Chocolate-covered strawberries:

Dip the strawberries in white or dark chocolate. 

Chocolate-coconut strawberries:

Dip the strawberries in white or dark chocolate and then roll them in a bowl of coconut flakes. 

Chocolate-drizzled strawberries:

Pour some of the dark chocolate dipping sauce into a Ziploc bag and some of the white chocolate sauce into another bag.  Cut one of the corners off of each bag.  Dip some strawberries in white chocolate and some in dark chocolate.   Pipe a drizzle design of white chocolate on the dark chocolate-covered strawberries and drizzle dark chocolate on the white chocolate-covered strawberries.

Place the chocolate-covered strawberries on a baking sheet covered with waxed paper.  Once the pan is full of strawberries, place it in the refrigerator and let the strawberries chill for an hour or more until the chocolate hardens.

Store leftover chocolate-covered strawberries in a sealed container in the refrigerator.
