Lemon Chicken Pasta

 

We liked our Clam Pasta from a while back so much that we made it with lemon chicken this time.  It is a light and colorful pasta dish full of some of our favorite summer vegetables: zucchini, summer squash, peppers and tomatoes.  Allow some time to chop all of the veggies {a step that can be done ahead of time} but other than that the pasta comes together quickly.

This pasta dish is a great way to use summer vegetables such as tomatoes, zucchini and summer squash.
Ingredients
Lemon Chicken
  • 1 pound chicken thighs or chicken breasts
  • 1 lemon, juiced
  • Salt, to taste
Pasta
  • 3 chicken sausage links, cooked
  • 3 slices of bacon
  • 1 zucchini, cut into chunks
  • 1 summer squash, cut into chunks
  • 3 Roma tomatoes, cut into chunks
  • 5 mushrooms, cut into chunks
  • 1 head of garlic, minced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 pasilla pepper, chopped
  • 3 serrano peppers, chopped, optional
  • 1 pound of linguine, cooked and cut into 2-inch strips
  • ½ cup feta cheese crumbles
  • 2 cups beer or white wine
  • 1-2 tsp paprika, to taste
  • Handful of parsley, shredded
Instructions
Lemon Chicken
  1. In a pan lightly coated with cooking oil {or on a broiling pan in the oven} sear the chicken thighs for several minutes until browned on each side.
  2. Remove the thighs from the pan and chop them into bite-sized pieces.
  3. While you are cutting the chicken into chunks, add the juice of one lemon to the pan and let it begin to simmer over medium heat.
  4. Add the chicken chunks and continue cooking them in the lemon juice until they are fully cooked, adding some salt to taste.
Pasta
  1. Cook the bacon until it is crispy.
  2. Chop it into bits and set it aside.
  3. Cook the linguine noodles according to the directions on the package.
  4. Cut the chicken sausage into chunks.
  5. Lightly coat a pan with olive oil and saute the chopped vegetables for several minutes or until they are tender.
  6. Add the beer or white wine, chunks of chicken sausage and the cooked chicken and let the mixture simmer for 5-10 minutes.
  7. Toss with Parmesan cheese, feta cheese and bacon bits.
  8. Serve the pasta sauce over the cooked linguine or toss it together with the noodles.
