Mickey Mouse Pancakes {Chocolate Chip-Banana-Oatmeal Pancakes}

 

For the Mickey Mouse pancake party favors at my son’s Mickey Mouse Clubhouse 3rd Birthday Party I used my basic buttermilk pancakes as the base but added some oatmeal for some wholesome goodness and some mashed banana to make them extra tender and add the comforting banana flavor.  The chocolate chips are optional but make them fun for a special breakfast treat.  Of course, the Mickey Mouse shape is optional, too.  The chocolate chip-banana-oatmeal pancakes will be devoured regardless of their shape!

I portioned the pancake mix into half-batch quantities that would yield about six 5-inch pancakes.  I have included the full recipe below, yielding 10-12 5-inch pancakes.  The measuring is not a science so you can make bigger or smaller pancakes.

These chocolate chip-banana-oatmeal pancakes will be devoured regardless of their shape.
Ingredients
  • 1 cup flour
  • 1 cup oatmeal
  • 1 Tbsp brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 2 Tbsp oil
  • ¼ -1/2 cup chocolate chips
  • 2 bananas, mashed
Instructions
  1. Mix the dry ingredients together in a bowl.
  2. Stir in the wet ingredients just until everything comes together. The batter should still be lumpy.
  3. Heat a pancake griddle over medium heat and lightly grease it by rubbing a stick of butter across the service.
  4. Pour just under ⅓ cup of batter onto the griddle and quickly and gently spread it into a circle using the back of the spoon.
  5. Pour just under 1 Tablespoon of batter onto the griddle for each ear.
  6. When bubbles start to appear on the surface, flip the pancake and continue letting it cook until both sides are golden brown.
  7. Serve the pancakes with maple syrup and the toppings of your choice.
