Spritz Cookies

 

 

 

These light, melt-in-your-mouth cookies are bite-sized and dainty but the almond flavor packs a punch.  When I was a kid, my mom made these every Christmas in the shape of Christmas trees, decorated with red and green sprinkles.  You can easily make a variety of shapes for any occasion using a cookie press (such as the Wilton Cookie Pro Ultra II Cookie Press).

These light, melt-in-your-mouth spritz cookies are bite-sized and dainty but the almond flavor packs a punch.
Ingredients
  • 1 cup butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 tsp almond extract
  • 2¼ cups flour
  • ½ tsp baking powder
  • ¼ tsp salt
Instructions
  1. Cream the butter and the sugar until fluffy.
  2. Beat in the egg.
  3. Then add the remaining ingredients and mix them well.
  4. Fill your cookie press with the batter and follow the instructions of your cookie press, pressing the spritz on an ungreased cookie sheet.
  5. Bake the cookies for 5-7 minutes at 325 degrees until they are just starting to turn a light golden color on the bottoms and around the edges.
  6. If you don't have a cookie press, you could probably roll the dough into balls and press them with the bottom of a glass or a shortbread cookie. The batter is sticky, however, and will be hard to work with if you handle it too much with your hands.
