Äppelformar (Apple Muffins)

 

This recipe for äppelformar comes from The Cooking of Scandinavia, part of the Time-Life cookbook series.  These little pastry muffins filled with applesauce are like a cross between apple pie and apple cake.  They are perfect for a sweet breakfast or an afternoon snack.  I like to serve them warm, fresh from the oven.

These little pastry muffins filled with applesauce are like a cross between apple pie and apple cake and are perfect for a sweet breakfast or an afternoon snack.
Ingredients
  • 5 Tbsp butter
  • ½ cup sugar
  • 1 egg
  • 1½ cups flour
  • ¼ tsp baking powder
  • 1½ cups applesauce
Instructions
  1. To make the muffin dough, cream the butter and the sugar.
  2. Add the egg and mix the batter well.
  3. Add the flour and the baking powder to the batter and blend it into a dough using your fingertips.
  4. Cover the dough ball with plastic wrap and let it chill for at least one hour.
  5. Reserve ⅓ of the chilled dough, wrap it and place it in the refrigerator.
  6. Divide the remaining dough into 12 balls.
  7. Place each ball into a lightly-greased muffin tin (2 - 2½ inches in diameter) and press the dough into the bottom and up the sides of the tin. The dough should be about ¼-inch thick.
  8. Fill the dough-lined muffin tins with 1-2 tablespoons of applesauce.
  9. Roll out the remaining chilled dough and cut out 12 circles that match the diameter of the muffin tins.
  10. Place the dough circles on top of the filled muffin cups and press the tops and the edges together until they are completely sealed.
  11. Bake the muffins at 350 degrees for 30 minutes, or until they are light golden brown.
  12. Loosen the muffins with a knife and let them cool in the tins.
