Banana Bars

 

My sister got this recipe from one of her friends and highly recommended it.  When I made the banana bars for my family we thought that they could be the best thing banana that we have ever eaten.  They are not too sweet and have a delicate banana flavor.  The cream cheese frosting adds a light creamy sweetness and definitely makes them a dessert.  But we loved them without frosting, too.  I made a half batch of the frosting so that we could enjoy them both ways.

These banana bars could be the best thing banana that I have ever eaten. They are not too sweet and have a delicate banana flavor.
Ingredients
  • ½ cup butter, softened
  • 1½ cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 cup mashed bananas
Cream Cheese Frosting
  • 1 package cream cheese
  • ½ cup butter, softened
  • 2 tsp vanilla
  • 4 cups powdered sugar
Instructions
Banana Bars
  1. Cream the butter and the sugar.
  2. Add the eggs, sour cream and vanilla.
  3. Combine the flour and baking soda and gradually add them to the creamed mixture.
  4. Stir in the mashed bananas.
  5. Spread the batter into a greased 15 x 10 x 1 pan (or a 9 x 13 and a 8 x 8 pan).
  6. Bake the bars at 350 degrees for 20-25 minutes until a toothpick comes out clean. The cake should spring back to the touch.
  7. Once cooled, frost the bars and cut them into the size of your choice to serve.
Cream Cheese Frosting
  1. Mix the ingredients to form a creamy frosting.
  2. Spread the frosting over the banana bars.
  3. Store the frosted banana bars in a sealed container in the refrigerator.
