Chile Verde

 

Chile verde is a Mexican stew that is traditionally made with pork and a green broth of tomatillos and chile peppers {essentially salsa verde}.  To make it easy and to keep the pork tender, we use a slow cooker. 

I like to serve our chile verde with corn tortillas, lime-cilantro rice or Mexican arroz and sour cream.

This Mexican stew is a flavorful meal that comes together quickly when you use a slow-cooker.
Ingredients
  • 3½ lbs of pork, cut into 1-inch cubes
  • 4 cups salsa verde
  • ½ - 1 cup chicken broth, optional
Instructions
  1. Coat a pan with vegetable oil and heat it on high.
  2. Brown the pork cubes for one minute on each side.
  3. Add the salsa verde, chicken broth and pork to a slow cooker and cook it for four hours.
  4. Garnish the chile verde with shredded cilantro and serve it with corn tortillas, light sour cream, beans and rice.
