Green {Spinach} Smoothie

Smoothies have become a mainstream healthy snack for good reason.  Especially when you make them at home, you can pack them with nourishing whole foods without overdoing it on the sugars, sweeteners and other fillers.

I often add a handful of spinach or kale into our fruit and yogurt smoothies.  This time, however, I wanted the spinach to be the belle of the ball, and I wanted the smoothie to remain {green}.  There is something so satisfying about filling a blender with spinach leaves and blending it up into a tasty drinkable concoction that even your kids will enjoy.

I used Trader Joe’s Green Plant juice and kiwis in keeping with the color theme.  I used frozen pineapple chunks instead of frozen berries to add flavor and frozen texture without tinting the color.  Add more or less pineapple depending on how thick and icy you like your smoothie.  As with any smoothie, you can mix and match to your heart’s content.

Ingredients
  • 1 banana
  • ½ cup plain Greek yogurt
  • 2 cups tightly-packed spinach (and/or kale)
  • 1-2 cups frozen pineapple
  • ½ cup Trader Joe's (or other) Green juice
  • 1-2 kiwis, optional
  • 2-3 tsp chia seeds, optional
Instructions
  1. Blend the ingredients in a blender until smooth.
  2. Adjust the amount of juice and frozen pineapple to reach your desired consistency.
  3. Garnish with kiwi slices if desired.
