Peanut Butter-Banana Pancakes

 

Growing up we would top our basic buttermilk pancakes and waffles with peanut butter and maple syrup for a special treat.  Because bananas go so well with peanut butter they are the perfect addition to the pancakes.  The resulting combination of peanut butter, bananas and maple syrup is one of my favorites.  Adding mashed bananas to the pancake batter keeps the hotcake texture light which complements the richness added by swirling some peanut butter into the batter.  Once the pancakes are cooked you can then slather them with additional peanut butter, top them with sliced bananas and drizzle them with maple syrup.

Peanut butter, banana and maple syrup is a rich and comforting combo.
Ingredients
  • 1 cup flour
  • 1 Tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 2 Tbsp oil
  • ½ cup mashed banana and ½ cup sliced bananas {approximately 2 bananas}
  • 2-4 Tbsp peanut butter
  • Maple syrup
Instructions
  1. Mix the dry ingredients.
  2. Stir in the wet ingredients.
  3. You can add mashed banana and peanut butter to the pancake batter or cook the basic buttermilk pancakes and put the bananas and peanut butter on top. Or you can do both.
  4. Cook the pancakes on a griddle at medium heat until they are golden on each side. Spread peanut butter on the pancakes and sprinkle them with banana slices.
  5. Top with maple syrup.
