Cheese Mousekedillas

Mickey Mouse quesadillas made the perfect mess-free finger food for my son’s Mickey Mouse Clubhouse 3rd birthday bash and they added a little more substance to the array of sweets and treats. Cutting Mickey Mouse shapes out of quesadillas {or sandwiches} is fun any day and something that your kids will surely want to help with. You can use your favorite type of quesadilla or sandwich although I have found that simple fillings work best to help keep the clean shape of the quesadillas. Hummus, beans & cheese, pb&j, ham & cheese and cream cheese are some of our healthy favorites.
- 4 flour tortillas
- Grated cheese
- Mickey Mouse cookie cutter
- Working with two tortillas at a time, sprinkle grated cheese on one of the tortillas and place the second tortilla on top.
- Microwave the quesadillas for 30 seconds - 1 minute, or until the cheese melts. (You can also grill them or place them in a panini press.)
- Using the Mickey Mouse cookie cutter, cut the quesadilla into shapes.
- Serve the cheesy quesadilla immediately or place them in foil-wrapped oven-safe dish and keep them warm in the oven at low heat.
- Reserve the quesadilla scraps for leftovers and snacks.
