Crockpot Minestrone Soup

The first time I made this soup we had an array of summer veggies in the refrigerator (zucchini, yellow squash, tomatoes, spinach and mushrooms) that needed to be used up. I started adding ingredients to the slow-cooker and this crock-pot minestrone was born.

I have had the opportunity to work on the Pass the Prosciutto - Gluten Free Holiday Entertaining campaign through Prosciutto di Parma. The Consorzio del Prosciutto di Parma (the organization that certifies this ham from the hills around Parma, Italy and gives the brand of ham its quality seal of approval) is celebrating 50 years although the tradition of making this ham is more than 1,000 years old.

We don't have a shamrock cookie cutter so we improvised with green hearts and iced a stem on the plate. Spinach juice gave the powdered sugar glaze its beautiful natural green color.

Traditional pesto is intense and, as I guessed, you don't even notice that the spinach is in there because the other flavors {basil, garlic and pine nuts} dominate. As with basic pesto, a little bit goes a long way. You just need a couple of spoonfuls to stir into a pasta sauce or spread on top of a pesto cheese bread.

I know what you're thinking: spinach or beet juice in my buttercream frosting?! Yuck! But you will be amazed at how you don't even taste them, especially with the small quantities being used. As far as I'm concerned, I would much rather have my family consume a little spinach, beet or other natural dye than a chemically-produced version.

I've received such good reviews about my homemade chicken sausage that I decided to transform it into meatballs. Spinach is the star ingredient that earned these meatballs a spot on my Tapas For a Cure menu, but I also love the fact that they are made with chicken.

Frittatas and Spanish tortillas are very similar. A common version of the tortilla española is made with a simple combination of eggs and potato. In this rendition, I added spinach, feta cheese, bacon and red bell pepper.
