Better Oats Pomegranate Oatmeal Waffles

I LOVE oatmeal so I was excited at the opportunity to sample a selection of Better Oats instant oatmeal and create a recipe.  Though I have nostalgic childhood memories of camping with instant {maple and brown sugar} oatmeal, in recent years I have typically cooked whole oats on the stovetop and added frozen berries or other toppings of choice.  I even have it down to a science for making it in the microwave on busy, workday mornings.  But as I enter the pre-school years and realize that I am now responsible for getting three people ready and out the door in the morning, I was intrigued by Better Oats which promises quick instant oatmeal in tasty flavors while still offering 100% whole grain, added flax seeds, real fruit and all the other health benefits of whole oats.

From my sample box I first tried the MMM… Muffins Blueberry Muffin variety and was pleasantly surprised by how it really does taste like a blueberry muffin, in oatmeal form.  I also sampled the Organic RAW Pure & Simple – Bare variety with 5 organic whole grains and organic whole flax seeds.  Topped with some frozen loganberries, it was a quick and filling breakfast.  Then I set my eyes on the Organic RAW Pure & Simple Pomegranate variety, naturally flavored and also made with 5 organic whole grains and organic whole flax seeds.  For a pop of color, I sprinkled pomegranate seeds on top for a beautiful and festive holiday snack.  I’ll continue sampling the other varieties, but for now I’ve been perfectly satisifed with the unique pomegranate flavor and the bare flavor that can be dressed up with whatever seasonal toppings of choice.

The pomegranate oatmeal directed my mouth-watering brainstorming to these Better Oats Pomegranate Oatmeal Waffles.  The addition of Better Oats oatmeal gives these hearty waffles a burst of flavor and fiber and the pop of red pomegranate seeds makes these waffles a festive holiday breakfast.  All in all, these waffles are a comforting and colorful meal or snack for the cold winter months.  {The oats could easily be mixed into pancakes or muffins instead.  I can also envision making a waffle (or pancake) version using the blueberry muffin oats and topping them with homemade chunky blueberry syrup.}

Pomegranate Oatmeal Waffles

Better Oats pomegranate oatmeal {with the addition of pomegranate seeds} gives these hearty waffles a burst of flavor and fiber, and makes them a comforting, colorful breakfast during the cold winter months.
Ingredients
  • 1¾ cups flour
  • ½ tsp salt
  • 2 tsp baking soda
  • 3 tsp sugar
  • 2 packs Better Oats Pomegranate Oatmeal (roughly 1 cup oats)
  • 2 eggs
  • 1¼ cup milk
  • ⅓ cup oil
  • ½ cup pomegranate seeds + extra for top of waffle prior to cooking + garnish
Instructions
  1. Mix the dry ingredients.
  2. Beat in the milk, oil and eggs.
  3. Stir in the pomegranate seeds.
  4. Pour roughly 1 cup batter onto a lightly greased waffle iron that has been heated according to the manufacturer's instructions.
  5. Sprinkle the top of the batter with another 1 Tbsp pomegranate seeds before closing the lid and cooking the waffle (optional).
  6. Garnish the cooked waffle with pomegranate seeds and serve with maple syrup.
