It's a hot cocoa {with marshmallows} kind of snow day. If my boys could have their way, every day would be a hot chocolate kind of day. But today was special because we took part in the age-old ritual of playing in the snow until we couldn't feel our toes and then warming up by wrapping our hands around a mug of steaming hot chocolate.

Maple cinnamon whipped cream was the finishing touch for our decadent pumpkin pie oatmeal pancakes with maple pecans but I can envision many other sweets and hot drinks topped with this fall-spiced whipped cream.

Made with powdered sugar, this whipped cream frosting seems to be more stable than the whipped cream that I normally make but it is still light and fluffy. Though it is plenty rich, it is lighter and less sweet than buttercream frosting, making it a perfect option for angel food cake and other light summer desserts.
