I made green eggs and ham again to celebrate Dr. Seuss' birthday which is tomorrow {March 2}. This time I used spinach juice instead of green food coloring to make the green eggs. The natural dye of the spinach turned the eggs a beautiful green and you won't even taste the spinach.

The origins of chicken cordon bleu are unclear but it is thought to be an American dish, not French, as the name implies. I baked the chicken to make the dish lighter, and added a creamy mushroom sauce to complete this rich, comforting (and guilt-free) meal.

The inspiration for this sandwich came from one of my favorite sandwiches growing up: the Bagel Burger. It is simply a bagel loaded with cream cheese, ham and cheese, which is then wrapped in foil and warmed until all of the cheeses melt together.

Cauliflower and cheese is the British take on the popular comfort food: macaroni and cheese. What a clever way to disguise cauliflower. We recently had some friends over for dinner and I made this dish...nobody missed the pasta! I can't wait to try this with broccoli, carrots and other vegetables. What veggies wouldn't be good with a cheesy Mornay sauce?!
