This fusion of Mexican and Italian cuisines was inspired by the Italian Caprese salad. Tomatoes are still the base of this stacked salad but I have traded out the other ingredients {mozzarella cheese, basil and balsamic vinaigrette} for their south-of-the-border counterparts that my family loves so much.

This creamy potato salad is reminiscent of the classic potato salad that I had growing up. I love that I now don't have to feel guilty while eating it. It is made with light sour cream instead of mayonnaise so it is actually a nutritious side dish loaded with vegetables, healthy proteins and starch.

I love how colorful this salad is, which is also an indication of the vitamins and nutrients that you'll get with each bite. The salad doesn't try to hide the veggies but the bright rainbow colors and seasoned taste of the Italian dressing help make them more palatable if your kids are not fans of eating vegetables.
