This lemon-thyme-honey vinaigrette is light, refreshing and easy to make. I tossed my salad with apple, Havarti cheese, asparagus and pumpkin seeds but you can add whatever ingredients you would like.

This salad is light and refreshing without being overly sweet. I love the fact that because the salad is loaded with fruits and candied pecans, you don't have to use much salad dressing at all.

This recipe comes from my good friend, Milena, in Germany. Similar to crêpes, German pancakes are large and thin and can be used for both sweet and savory dishes. When I made these recently for breakfast, I made the sweeter version and added grated apples and blueberries to some of the pancakes.

This combination of apple, cinnamon-sugar and chocolate with vanilla ice cream is a delightfully light and refreshing end-of-the-night treat! I like the tartness of Granny Smith apples paired with the sweetness of the cinnamon-sugar and chocolate syrup but you can use any apple variety.
