Mardi Gras King Cake

Traditions and customs are plenty when it comes to the King Cake. I made a cake that is more in line with those found in the Southeast United States, centering around the New Orleans Mardi Gras festivities. I used natural food dyes {spinach green, blueberry purple and pineapple gold} to decorate my cinnamon-roll King Cake with the iconic Mardi Gras colors.

For round two of the Ragú “New Tra-Dish” project, I have transformed eggplant parmesan into a low-carb, vegetarian lasagna. This eggplant parmesan lasagna may be hands down my favorite way to eat eggplant and I can honestly say that I do not miss the noodles.
