Use your imagination to come up with fruits and veggies to dye the sugar. Spinach juice, carrot juice, and berry juices (all giving slightly different pink-purple hues) are just a few of the options.

Traditions and customs are plenty when it comes to the King Cake. I made a cake that is more in line with those found in the Southeast United States, centering around the New Orleans Mardi Gras festivities. I used natural food dyes {spinach green, blueberry purple and pineapple gold} to decorate my cinnamon-roll King Cake with the iconic Mardi Gras colors.

My color choice for this naturally-dyed layer cake obviously reveals who I'll be rooting for but I'll give you Broncos fans a little hint: you can have your {blue and orange} cake and eat it, too, if you simply use carrot juice instead of spinach juice.

Amidst the checkout chaos of paying for groceries with my 4 and almost 2-year olds, I started envisioning a naturally-dyed green jelly roll cake in the shape of a shamrock. And voilĂ ! Here we are a few days before St. Patrick's Day and my brainstorm image has come to life. You can enjoy your jelly roll in individual slices or arrange three slices per plate to make a festive St. Paddy's shamrock.

As popular as red velvet cake (and red velvet everything) has become, I don't remember ever having red velvet cake as a kid. I guess ever since then I've had red velvet cake on my mental baking list.

This combo of natural food dyes isn't just about avoiding artificial dyes and coming up with beautiful {natural} colors. It's also because I simply love the combination of almond and berries.

We don't have a shamrock cookie cutter so we improvised with green hearts and iced a stem on the plate. Spinach juice gave the powdered sugar glaze its beautiful natural green color.

Rainbow cakes are everywhere these days. I made one last summer and my family and guests loved the bright, vibrant colors. But in the back of my mind I couldn't help but think of the negative discussion and controversy surrounding chemical food coloring. My husband was actually the one to challenge me to make a rainbow cake with natural food dyes.
