This basic balsamic vinaigrette pairs well with many salads and if you're like me, you'll pour a little extra on your plate just for dipping your bread.

In a nutshell, these caramelized beets are the best beets that I have ever had. They are a nutritious, colorful and tasty addition to the dinner table.

We didn't miss the tahini in this tahini-less hummus. To round out the flavor and texture, I blended in some feta and then topped the hummus with olive oil, feta crumbles and a dash of paprika and cayenne pepper.

This pasta dish is similar to my Pizza Pasta and also closely resembles a traditional lasagna with the ricotta cheese. The simple Italian flavors come together quickly to make a sophisticated meal.

Chicken with Forty Cloves of Garlic

This version of Chicken with Forty Cloves of Garlic is easy because you put all of the ingredients in a casserole dish, bake it in the oven and forget about it. The end result is a rich, comforting meal. If the thought of forty cloves of garlic frightens you, there is no need to worry. The garlic flavor mellows as the cloves cook and when they are done, they are rich and buttery, perfect for slathering on your favorite bread or even the chicken itself.

Jiaozi (Chinese dumplings) is a traditional Chinese dish that is popular during the Chinese New Year celebration. The pronunciation of this Chinese pot-sticker resembles the sound of a word for money so the tradition is to serve them during the New Year festivities as a promise of wealth and luck in the coming year.

My family loves our lighter chicken tikka masala sauce so much that we decided to make the Indian curry dish with fish instead of chicken. I knew it was a successful meal when my son devoured the fish just as quickly as he does the chicken.

Mushroom Pilaf

This mushroom pilaf is a comfort side dish but it is surprisingly light. It is a healthy makeover of a pilaf that I used to love as a child.

Oven-Roasted Chicken

Roasting a whole chicken in the oven or on the BBQ is easier than than you think, it just takes several hours (depending on the size of the chicken). This is my take on the roasted chicken that my mom would make for my family when I was a kid. The chicken goes well with just about any side dish. And the leftover herbes de Provence-infused meat makes yummy sandwiches the following day.

I like to serve an assortment of hummus flavors, including this version with spinach and feta cheese. You and your family won't even realize that you are devouring a healthy leafy green.
