My family loves our lighter chicken tikka masala sauce so much that we decided to make the Indian curry dish with fish instead of chicken. I knew it was a successful meal when my son devoured the fish just as quickly as he does the chicken.

It has been salmon season in the Pacific Northwest. With my husband's last catch we smoked some of the salmon fillets in a wood chip smoker. Serve the smoked salmon with crackers and cheese for a healthy snack and an easy 'gourmet' hors d'oeuvre.

All fish and seafood is not created equally. For health and/or environmental reasons, consumption of some species should be limited and other species should be be avoided altogether. The Environmental Defense Fund has a website that helps when selecting which types of seafood to eat. You can print out the seafood pocket guide and take it with you when you buy seafood at the grocery store or local fish market.

Kids generally like sauces made with coconut milk so it is a great ingredient for disguising healthy fish and vegetables that aren't typically kids' favorites. Plus, new studies indicate that coconut milk itself is an extremely healthy ingredient. I love how simple the ingredient list is and how quickly this dish comes together.

These spicy fried fish fillets from Kenya are simple to make. I was surprised to discover that the seasoning is very similar to other rubs and marinades that we often use for chicken and fish, comprised of several of our "go-to" ingredients that you, too, will most likely have on hand.

This version of Moqueca de Peixe e Camarao (Brazilian Fish and Shrimp Stew) comes from the state of Bahia in northen Brazil. It reminds me of a Thai curry because of the coconut milk. You can make it with only fish - Moqueca de Peixe - or only shrimp - Moqueca de Camarao - but we liked it with the combination of seafood.
