This sausage can be formed into patties or links for a breakfast sandwich, or even cooked as ground sausage to be used in a breakfast casserole. The brown sugar is optional but I like how sweet plays with spicy.

This chili is easy to make and can be made on the stovetop or in a slow-cooker. I used leftover BBQ chicken but it would also be good with ground chicken, turkey or beef.

This is a great sausage for pizzas and pasta. By finely chopping the spinach and cooking it in the sausage, my son (along with the rest of us) consumes healthy leafy greens without even noticing!

These spicy fried fish fillets from Kenya are simple to make. I was surprised to discover that the seasoning is very similar to other rubs and marinades that we often use for chicken and fish, comprised of several of our "go-to" ingredients that you, too, will most likely have on hand.
