This fusion of Mexican and Italian cuisines was inspired by the Italian Caprese salad. Tomatoes are still the base of this stacked salad but I have traded out the other ingredients {mozzarella cheese, basil and balsamic vinaigrette} for their south-of-the-border counterparts that my family loves so much.
Chipotle seems to be one of those flavors that you either love or hate. It wasn't until recently that I started to appreciate the smoky flavor of chipotle peppers in adobo sauce {smoked and dried jalapenos in a tangy red sauce}.
My family has come to the conclusion that the best nachos we've ever had are from...home. In our opinion, these nachos are better than restaurant quality because each chip is loaded with toppings so that nobody complains about the pile of plain chips underneath the top layer of nachos. The key is to use homemade guacamole and salsa, and to marinate the chicken. But even if you're short on time and choose to use store-bought versions of the ingredients, serving "sliders" is a great way to present your nachos.
Make an assortment of mini hamburgers for a party or a fun family meal. Lay out a smorgasbord of toppings and let everyone build their own slider. Serve the mini burgers with fruit salad, potato salad, french fries or sweet potato fries.
One of our favorite dips is a simple combination of homemade salsa and light sour cream. The sour cream tones down the spice and allows you to get a hint of heat without letting the spice overpower the other flavors. It is a flavorful dip for chips and veggies and also makes a creamy spread for sandwiches and burgers.
My favorite time of year to make this salsa is in the summer and early fall when we are harvesting the tomatoes and peppers from our garden. It is great in many dishes, including fish tacos, omelettes and fajitas.
We incorporate this salsa verde into many of our dishes. Outside of traditional Mexican food, it is also excellent for marinating chopped ham and sausage for breakfast dishes. Make it as spicy (or not spicy) as you would like by adjusting the peppers in the mix.
