Our grocery store had a display of local (Applegate) asparagus so we’ve been eating a lot of this healthy, green veggie lately.  Like most foods, there is nothing like fresh, local asparagus, consumed when it is in season. 

My sister-in-law and her girls taught me how to make this healthy and kid-friendly snack.  The rolls are easy to make and they’re a great way to disguise asparagus.  And your kids can help you make the rolls.

Ingredients

10 slices of ham, cooked (cut to size, roughly 1″ x 5″)

Approximately 1 1/2 tsp light cream cheese per roll

3 asparagus tops per roll

Rinse the asparagus and break off the bottoms (roughly the bottom third).  Dispose of the bottoms.  Break the top section into roughly 2-inch pieces.  Place the pieces in a bowl with 1-2 inches of water.  Sprinkle them lightly with salt.  Cover the bowl with plastic wrap and steam the asparagus in the microwave for 2-3 minutes, until they are tender and cooked.

Spread roughly 1 1/2-2 tsp light cream cheese on each slice of ham.  Place three asparagus tops on one end of the ham.  Starting with that end, roll the ham up over the asparagus and continue rolling it to form a spiral roll.

Place the rolls seam side down on a plate and enjoy them as an appetizer or a snack.

    I made these for appetizers last night and they were a huge hit! You are right – they are extremely easy to make and a wonderful way to serve asparagus.
