At its base, this soup is simply a vegetable {mushroom} soup with the sautéed and softened veggie mix pureed until smooth. It's cream of mushroom soup without the full cream.

The first time I made this soup we had an array of summer veggies in the refrigerator (zucchini, yellow squash, tomatoes, spinach and mushrooms) that needed to be used up. I started adding ingredients to the slow-cooker and this crock-pot minestrone was born.

In this comforting, creamy soup sans cream, warm hints of curry and ginger round out the natural sweetness of the carrots. It is a healthy, satisfying soup any time of year and it's a festive spring and Easter meal when served with bunny grilled cheese sandwiches or Annie's All-Natural Bunny Crackers.
