Popsicles are super easy to make as long as you have some time to let them freeze. At the most basic level all you need is some fruit juice. For extra vitamins and some oomph in flavor, I like to blend in fruit, leaving some of the berries whole and some of the other types of fruit in chunks. You can use whatever combo of juices and fresh or frozen fruit that you'd like.

This is such an easy dessert and a great way to use up pie crust scraps for the garnish. Sugar cookies would also be a great topper if you don't have any pie crust handy. I like making an assortment so that everyone can have their favorite and so you can take advantage of all of the fresh fruits of summer.

In my mind, homemade berry jam is in another league than store-bought variations. And I love how fresh the freezer versions taste compared to the cooked and canned jellies. Each bite transports me to the berry patch as I taste the freshly-picked berries and remember all of the fun berry-picking excursions with my grandma and mom when I was little.
