Chewy Sugar Cookies

These sugar cookies have always been favorites of mine. My Grandma and my mom would make them often during my childhood. Do not be deceived by their thickness because though they are thin they are not hard and crispy. But they aren’t puffy and cake-like, either. They are soft and chewy and will melt in your mouth with their wonderful vanilla-infused sugar flavor.
They are simpler to make than many sugar cookie recipes because you don’t need to mess with rolling out the cookie dough and cutting them into shapes. Simply roll them into balls and gently flatten them with a glass. In my family we have always served them plain {or with ice cream} but you can decorate them with frosting or whatever else you would like.
- ½ cup shortening
- 1 cup sugar
- 1 egg
- 1 Tbsp milk
- ½ tsp vanilla
- 1½ cups flour
- 1 tsp baking powder
- ¼ tsp salt
- Cream the shortening and the sugar.
- Add the eggs, milk and vanilla.
- Stir in the flour and mix until all of the flour is incorporated into the dough.
- Cover the dough and let it chill for 30 minutes or more.
- Roll the dough into small balls roughly the size of a walnut and place them on a greased baking sheet.
- Flatten the balls with the bottom of a glass that has been dipped in sugar.
- Bake the cookies for 8-10 minutes at 325 degrees until they are just starting to turn lightly golden around the edges, being careful not to over cook them so that they stay soft and chewy. They will continue to set as they cool.
- Remove the cookies from the oven and let them cool for 5 minutes on the pan and then place them on a wire rack to cool completely.

Sounds delicious! Can you substitute butter for the shortening?
Stacey, you could substitute butter. The texture may change a little but I’m sure they’d still be delicious.
