Chicken Cacciatore Soup

I have had the opportunity to partner with Ragú to cook up some Italian dishes. As part of the “New Tra-Dish” project I was asked to select two of the Ragú Authentic Italian Recipes and create my own spin on them. This soup is reminiscent of a minestrone soup but instead of using a tomato base I used Ragú® Old World Style® Traditional Sauce. As in chicken cacciatore {hunter-style chicken} this chicken is combined with bell peppers and mushrooms, and the sauce turned broth is made heartier with some more seasonings and red wine. The soup is extremely easy and can even be made in a slow-cooker or Crockpot if that works better for you.
- 1 jar Ragú® Old World Style® Traditional Sauce
- 2 chicken thighs or 1 chicken breast, cut into pieces
- 1 yellow or orange bell pepper, chopped
- 4-6 mushrooms, sliced
- 3 garlic cloves or 3 tsp garlic powder, to taste
- 1 small yellow onion, chopped
- ¼ cup red wine
- ½ cup Feta cheese
- 3-4 cups low-sodium chicken broth
- ½ -1 cup pasta or broken spaghetti noodles
- Saute the onion, peppers and garlic in a lightly oiled pan over medium-high heat. (Or you can simply add the vegetables and broth together and bring to a boil.)
- After a couple of minutes, add the mushroom slices and if desired, a dash of black pepper, to taste.
- Saute the vegetables for a few minutes more until lightly browned.
- Add the chicken broth and bring the broth to a boil.
- Add the chunks of chicken thighs or chicken breast.
- Cover the pot and reduce to a simmer.
- Let the chicken cook for 10 minutes, then add the pasta.
- Cover the pot again and let the soup simmer for another 10 minutes until the chicken is cooked and the pasta is nearing al dente.
- Add the Ragú sauce, wine and Feta cheese.
- Let the soup simmer to allow some of the Feta to melt and the pasta to fully cook.
- Continue seasoning to taste as necessary.
