Chocolate Cherry Pancakes

Earlier this summer we had an overflowing bowl of cherries and out of nowhere my son wanted to make cherry pancakes. Inspired by Ben & Jerry’s Cherry Garcia ice cream, I decided to take it up a notch and add chocolate. So into our buttermilk pancakes went the chocolate and cherry chunks. In the height of cherry season this was a rich summer treat. But even now that summer is winding down there is something warm and cozy about this sweet breakfast that I can envision in the middle of winter, using frozen cherry pieces to remind us of basking in the summer sun. For something a bit less decadent, simply omit the chocolate and use fresh or frozen cherries. To make a variety of plain, cherry and chocolate cherry pancakes, add the cherry and/or chocolate chunks individually to some of the pancakes as they cook.
- 1 cup flour
- 1 Tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 egg
- 1 cup buttermilk
- 2 Tbsp oil
- ¼ cup cherry halves or pieces
- ¼ cup chocolate chunks
- Mix the dry ingredients.
- Stir in the wet ingredients.
- Heat a griddle to medium heat and cook the pancakes until they are golden brown on each side.
- Serve the pancakes with toppings of your choice.
