Pear, Walnut & Blue Cheese Salad

This trendy salad is easy to make at home and can turn a normal meal into something a little bit more gourmet. Even if you’re not a blue cheese fan the combo of apples and/or pears and nuts is refreshing and can be paired with many other cheeses. I like to use my basic balsamic vinaigrette but you can use the dressing of your choice.
Pear, Walnut & Blue Cheese Salad

Ingredients
- Spinach
- Apple or pear slices
- Blue cheese crumbles
Candied Walnuts
- 1 cup walnuts or pecans
- 1 tsp butter
- 1 Tbsp maple syrup
Balsamic Vinaigrette
- 6 Tbsp balsamic vinegar
- The squeeze of a lemon, to taste
- 2 Tbsp olive oil
- 2 Tbsp powdered Parmesan cheese
- 1 tsp Worcestershire sauce
- Salt, to taste
- Pepper, to taste
Instructions
Candied Walnuts
- Mix the nuts, butter and maple syrup in a small skillet.
- Cook the nuts over medium heat for about 5 minutes until the liquid has boiled away and the nuts are beginning to caramelize.
- Let the candied nuts cool so that the glaze hardens.
Balsamic Vinaigrette
- Mix all of the ingredients except for the olive oil and the Parmesan cheese.
- Gradually add the the Parmesan cheese and then the oil as you whisk the vinaigrette to help make a smooth dressing.
Salad
- Layer or toss spinach {or mixed greens}, apple and pear slices, blue cheese crumbles and candied walnuts.
- Drizzle balsamic vinaigrette over the top.
