Sweet Potato Fries

Sweet potato fries are a yummy alternative to standard French fries. I like using a combination of sweet potatoes and yams to get a nice mix of colors. The sweet potatoes are naturally sweet and flavorful on their own so I often only season them with a little bit of salt. But they are also yummy with a dash of cinnamon, brown sugar and paprika. One sweet potato, depending on its size, feeds roughly two people.

Sweet potato and yam fries are a colorful and tasty alternative to french fries.
Ingredients
- 2 sweet potatoes and/or yams
- 1-2 Tbsp canola oil
- Salt, to taste
- A sprinkle of cinnamon, to taste, optional
- A sprinkle of brown sugar, to taste, optional
- A sprinkle of paprika, to taste, optional
Instructions
- Rinse and peel the sweet potatoes and yams.
- Slice them into thin strips. {You can also cut them into wedges or medallions, just make sure that all of them are roughly the same size and shape to ensure even cooking.}
- Place the strips in a bowl of ice water and let them soak for at least 30 minutes to remove the starch.
- Rinse the soaked strips and then dry them completely with paper towels or dish towels to remove all excess liquid.
Oven-Baked Sweet Potato Fries
- Pour the oil on a baking sheet.
- Place the sweet potato/yam strips on the greased baking sheet, arranged so that they do not touch each other on the pan.
- Brush oil on each individual strip.
- Salt and season the strips lightly, tossing them on the pan to ensure that all sides are evenly coated with the oil and seasonings.
- Bake them at 450-500 degrees for about 7-10 minutes on each side, until the strips are a dark golden brown (it may take longer), watching them closely so that they don't burn.
For Pan-Fried Sweet Potato Fries
- Generously layer the bottom of a pan with canola oil so that the entire bottom of the pan is covered.
- Heat the oil at medium heat for several minutes.
- Lightly season the raw sweet potato/yam strips with salt and the other seasonings of your choice.
- Add the strips to the pan and cook them until they turn golden brown, checking frequently to make sure that they don't burn.
- Reduce the heat if they are cooking too quickly.
- When done, place the fries on a paper towel to dab the grease.
- Add salt and other seasonings to taste.
