Home sweet home. There is something about the first pancakes on the deck on a sunny summer morning that makes a new place feel like home. My boys devour these nutrient-loaded banana-oatmeal-chia hotcakes, typically with peanut butter and a splash of syrup, while I like to top mine with almond butter and berries.
These strawberry-banana-oatmeal-buttermilk pancakes are perfect for Valentine's Day {or any other day!}. The oatmeal adds some whole grain to the pancakes; the mashed bananas make them extra tender; and the mashed strawberries {or strawberry jam} provide some sweetness and a light reddish hue
These basic buttermilk pancakes are a cinch to make. You can mix the dry ingredients the night before so that they come together quickly on school mornings and busy weekends.
The sourdough starter makes these pancakes light and airy and gives them a subtle sourdough flavor. If you don't have a starter in your family, you can make your own or even purchase one.
