Alphabet Soup

While we’re on the topic with our ABC mac and cheese, your kids will love it if you add alphabet noodles to your soup of choice as well.  If you’re short on time, the teeny alphabet noodles that you can find in some supermarkets work perfectly in soups.  If your kids are up for a project, you can use cookie cutters to cut your own letters (or shapes) out of cooked lasagna noodles as we did with our mac & cheese.

For the noodles to really stand out, a broth-based soup with minimal other filler items works well.  This tomato-carrot soup {a combination/variation of my Roasted Tomato Bisque and Curried Carrot Soup} is a colorful option.

Add alphabet noodles to the soup of your choice to transform it into a fun {and educational} eating experience for your kids.
Ingredients
  • 2-3 Tbsp olive oil
  • 2-3 medium-sized carrots
  • 1 small yellow onion, chopped
  • 2-3 garlic cloves, minced
  • 4 Roma tomatoes, sliced in half
  • 2 cups low-sodium chicken broth
  • Splash of milk, to taste
  • Salt & pepper, to taste
Instructions
  1. Coat the bottom of a pan with olive oil and heat it over medium-high heat.
  2. Place the carrots, onion, garlic and tomato halves in the pan and roast them, flipping them occasionally so that all sides cook evenly.
  3. Once they are lightly browned, add a splash of the chicken broth, cover the pan, reduce the heat and let the veggies simmer until the carrots are soft and tender but not mushy.
  4. Remove the pan from the heat and let it cool for a few minutes.
  5. Blend the veggies in a blender, adding some more chicken broth if needed to make a smooth mixture.
  6. Return the veggie puree to the pan and add the remaining chicken broth.
  7. Add a splash of milk and let the soup simmer over medium heat.
  8. Season the soup to taste.
