Easter Egg Quesadillas

Dress up your everyday quesadillas (or sandwiches) by cutting them into Easter egg shapes and letting your kids decorate them. I’ve discovered that my son has just as much fun decorating healthy food as he does cupcakes and sugar cookies. And it’s just one more way to make healthy food fun and festive.
You can either make the Easter eggs yourself or let your kiddos create them. I have found that simple fillings work best so that all of the filling doesn’t get squished out as you cut the quesadillas (sandwiches) into shapes but you can use the toppings and fillings of your choice.
- Tortillas
- Cheese
- Refried beans
- Avocado
- Salsa
- Light sour cream
- Assemble quesadillas using tortillas, cheese and beans (and any other fillings of your choice).
- Heat them in the microwave or in a panini press.
- Cut out Easter egg shapes using cookie cutters or cut around a waxed paper template using a pizza cutter.
- Decorate the tops of the quesadillas using cheese, sour cream, salsas, beans, etc.
