Mango Sorbet

This past week we had another preview of summer sunshine, weather that called for a refreshing frozen treat (one that coincidentally looks like a little ray of sunshine!). Homemade fruit sorbet {such as past favorites of orange sorbet and blueberry sorbet} is always a great option because it is easy and healthy. Typically only three ingredients {fruit, water and sugar} can yield a tasty fruit sorbet. By making it at home you can control the amount of added sugar, depending on your taste and the natural sweetness of the fruit being used.
My older son love mangoes, (eating them like an apple), so we like to load up on them when possible. They are typically plenty sweet so we sweetened this homemade sorbet minimally to let the true mango flavor shine.
Depending on what is available, you could also simply churn up mango juice. Because we had the fruit, and to control the sugar, we used sliced mango, blending it in a food processor with water to consistency, and lightly sweetening it to taste with sugar.
- 4 mangoes (roughly 2 cups sliced mango)
- 2 Tbsp - ¼ cup water, to consistency
- 1½ tsp sugar, to taste
- Blend the ingredients and let them chill.
- Churn them in your ice cream maker according to the manufacturer's instructions.
- Serve immediately as soft sorbet or freeze to allow it to harden completely.
