In my most recent batch of these muffins, I added shredded coconut to half of them. The ones with coconut were everyone's favorites. They remind me of macadamia nut pancakes with coconut syrup and leave me daydreaming of Hawaii.

These banana bars could be the best thing banana that I have ever eaten. They are not too sweet and have a delicate banana flavor. The cream cheese frosting adds a light creamy sweetness and definitely makes them a dessert. But we loved them without frosting, too.

The combination of peanut butter, bananas and maple syrup is one of my favorites. You can either add mashed bananas and peanut butter to the pancake batter or slather the hotcakes with peanut butter and sliced bananas, or both.

Don't be surprised if you intentionally let your bananas ripen so that you have an excuse to make this bread. It's that good! This loaf freezes well so double the batch and save a loaf for later.
