Turkey Burger Sliders

Turkey burgers have become a favorite in our household. When we recently made them we decided to make sliders. Sliders are the perfect size for kids and they also allow the adults to make multiple burgers with a variety of toppings and condiments. You can buy slider buns but if you have a little extra time these homemade hamburger buns adapted from the Good Housekeeping Illustrated Cookbook will make your meal extra tasty.

Ingredients
Turkey Burger
- 1 – 1¼ pound ground turkey (or ground chicken or ground beef)
- ½ of a red bell pepper, chopped (or 1 serrano pepper)
- 3 Tbsp crumbled feta cheese
- ½ cup shredded Jack cheese
- 1-2 tsp paprika
- 1-2 tsp cayenne pepper
- 5 drops Worcestershire sauce
Homemade Slider Buns
- 1 Tbsp sugar
- 1½ tsp salt
- 4½ tsp yeast (2 packages)
- 4-5 cups all-purpose flour
- 1 cup +1 Tbsp milk, divided
- ¼ cup butter
- 3 eggs, divided
Instructions
Turkey Burgers
- Mix all of the ingredients together in a bowl and shape the meat into 6-8 slider patties.
- Grill the burgers on the BBQ or cook them on the stovetop.
- To cook them on the stovetop, lightly coat a pan with cooking oil and cook the burgers at medium heat for 7-10 minutes on each side.
- To help the burgers cook all the way through, cover the pan while they are cooking.
- Assemble the burgers with the condiments of your choice.
Homemade Slider Buns
- Combine the sugar, salt, yeast and 1½ cups flour in a bowl.
- In a saucepan, heat 1 cup milk and the butter over low heat until the butter melts and the mixture is very warm.
- Gradually add the liquid into the dry ingredients, beating for 2 minutes.
- Add two eggs and ½ cup flour to make a thick batter.
- Beat for 2 minutes, then stir in 2 – 2½ cups flour to make a soft dough.
- Knead the dough for 10 minutes on a lightly-floured surface or with the dough hook of a stand-up mixer until the dough is smooth and elastic.
- Form the dough into a ball and place it in a greased bowl, first brushing the top of the dough on the bottom of the greased bowl so that it doesn’t dry out.
- Cover the bowl and let the dough rise for 1 hour or until it doubles.
- Punch down the dough and divide it in half.
- Cover the dough and let it rest for 15 minutes.
- Cut each half into 8-12 pieces, depending on the size of your sliders.
- Shape the pieces into balls and place them on a greased baking sheet 2 inches apart.
- Cover the rolls and let them rise for 30 minutes or until doubled in size.
- In a small bowl, beat 1 egg and 1 Tbsp milk.
- Brush the rolls with the egg glaze and bake them at 400 degrees for 10 minutes or until golden.
- Cool the rolls slightly on a wire rack, slice them in half, and assemble the sliders.
