Tzatziki Sauce

Tzatziki sauce {also known as cucumber salad} can technically be served as a dip or a salad but for me, I have always known it as the sauce that makes gyros. It was an integral part of my gyro sliders. The sauce adds a kick of creamy garlic to the wraps and the subtle yet refreshing burst from the cucumbers and the mint balances out the spice of the meat. I followed the recipe from The All New All Purpose Joy of Cooking but it seems similar to other recipes that I have seen.

Ingredients
- 2 cups low-fat Greek yogurt
- 1 cucumber, peeled and thinly sliced
- 1 tsp + 2-3 pinches salt
- 2 garlic cloves
- 2-3 tsp white wine vinegar
- 2 tsp chopped fresh mint
- Salt and pepper, to taste
- 1 Tbsp olive oil
Instructions
- Line a fine mesh colander with a cheese cloth or a coffee filter. {A paper napkin worked for me.}
- Let the yogurt drain for a couple of hours.
- Toss the cucumber and 1 tsp salt in a colander.
- Let the cucumber mixture rest for 30 minutes and then press out the excess water, rinsing them quickly and blotting them dry with paper towels.
- In a separate bowl, mash the garlic cloves and a few pinches of salt.
- Combine the drained yogurt, cucumbers, garlic paste and the remaining ingredients.
- Finish by seasoning the sauce to taste.
- Place the sauce in a sealed container and chill it until you are ready to use.
