Valentine’s Day Parfait

Valentine’s Day, like most other holidays these days, is full of sugary sweets. I’m sure it’s evident by now that I have a major sweet tooth and I love to bake, but I also like to make healthier festive treats and snacks over the holidays. This basic fruit and yogurt parfait is one such example.
Simply layer white (plain or vanilla) yogurt, red berries & fruit, a spoonful of raspberry freezer jam if you want to sweeten your plain Greek yogurt just a bit, and heart-shaped oatmeal pancakes to make a heart healthy breakfast, snack or dessert. And it doubles as an activity: my boys love every opportunity to create with cookie cutters! When the pancakes mix with the yogurt and berries they remind me of poundcake in a strawberry shortcake. I used my basic banana-oatmeal-buttermilk pancakes but you can use the pancakes of your choice.
*I plan to change up the fruits and pancakes to make variations of this parfait all year long.
- Vanilla yogurt or plain Greek yogurt
- Sliced strawberries, raspberries, pomegranate seeds and/or other red fruit
- Strawberry or raspberry freezer jam, optional
- Pancakes
- Heart cookie cutter
- Layer the yogurt, berries/fruit and jam in a parfait dish or a cup.
- Cut pancakes into heart shapes.
- Top the parfait with heart pancakes. (You can also layer heart pancakes into the parfait.)
