This fajita recipe came from a family friend and was a staple food for my family when I was a kid. Mixing ketchup and soy may seem odd but the combination makes for a rich marinade that is the perfect combo of salty and sweet. The marinade is super easy to throw together at the last minute but the fajitas are even better the longer the meat has to marinate.
I recommend grilling the chicken on the BBQ. If you cook it on the stovetop, remove excess marinade before cooking it so that the meat is not too rich and saucy.
Serve it with avocado slices and fajita peppers for a colorful and healthy meal.

Ingredients
Fajita Marinade
- ½ cup soy sauce
- ¼ cup vinegar
- 6 Tbsp ketchup
- 6-8 garlic cloves, to taste
- Black pepper, to taste
Fajita Pepper and Onion Mix
- 1 orange bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 red bell pepper, julienned
- 1 green bell pepper, julienned
- 1 onion, julienned
- Vegetable oil
- Hot sauce
- Garlic powder
- Salt & pepper
Instructions
Fajita Marinade
- Mix the ingredients and combine the marinade with strips of meat (chicken or steak) in a Ziploc bag.
- Let the meat marinate several hours or overnight.
- Grill the fajita meat on a BBQ, broil it in the oven or cook it over medium-high heat. My family prefers it grilled or broiled so that excess marinade is able to drip off while the meat cooks.
Fajita Pepper and Onion Mix
- Place the julienned vegetables on a large sheet of aluminum foil.
- Add a couple of drops of oil, hot sauce, garlic powder, salt and pepper (and any other desired spices).
- Roll the foil into a boat and crimp the edges together to seal it shut.
- Place the veggie boat on the upper rack of your BBQ or in your oven and steam until the veggies are tender.
